In the blessed soil that the Apostles and Saints of the ancient city of Soloi stepped on, the wineyard of Hesychasterion of Saint Seraphim was planted. From the grapes of the Shiraz variety the monks made this fine wine which matures for 12 months in French oak barrels. This sparkling wine comes exclusively from the local grape variety Xynisteri. It has been made carefully, following the traditional method with the second fermentation taking place in the bottle with a minimum aging of 18 months on the yeast lees. As a result a fine and persistent bubble is achieved, preserving the aroma of fresh fruit and pastries, great creaminess, high finesse, and a long and vibrant finish. This wine is made from a delicate blend of Mavro, Black Muscat and Shiraz. The grapes have been sun-dried for several days to achieve a high concentration of sugars and aromas, resulting in this naturally sweet wine from sun-dried grapes. This wine offers aromas of currant jam, dried plums, cocoa, cloves and cedar. In the mouth it is sweet, intense and well balanced with a long and fruity finish.
